Chef Yew Eng Tong is an acclaimed Singaporean chef celebrated for his refined modern European cuisine with Asian influences. Formerly Executive Chef and General Manager of the 1-Michelin-starred Alma by Juan Amador, he has built an impressive international career working alongside renowned chefs and representing Singapore on the global culinary stage.

His achievements include leading the Singapore National Culinary Team to victory at the Culinary Olympics and representing Singapore at the prestigious Bocuse d’Or. Known for his precision, creativity and elegant layering of flavours, Chef Yew brings fine-dining techniques into an approachable style that is both sophisticated and practical for the home kitchen.

Crispy-Skin Barramundi with Green Vegetable Remoulade, Crustacean Crème & Dill Oil

Perfectly pan-fried barramundi with golden crispy skin is paired with a fresh, crunchy remoulade of cucumber, fennel, celery and green apple. A creamy crustacean sauce and fragrant dill oil bring everything together for a refined yet comforting dish. Chef Yew will show how to achieve crisp fish skin, balanced sauce and elegant plating without complicated restaurant equipment.

 

Chicken Roulade with Cucumber Wakame, Soy Yuzu & Asian Harissa Chilli

Juicy chicken is rolled with a light, savoury chicken farce for a tender and elegant finish, then paired with a refreshing cucumber-wakame salad, bright soy-yuzu dressing and smoky Asian harissa. It looks restaurant-worthy, but Chef Yew will break down the roulade technique into simple, manageable steps that can easily be recreated at home.

 

Crispy Layered Potato with Burnt Butter Hollandaise & Furikake

Thin layers of potato are baked, pressed and fried until beautifully crisp on the outside while staying soft and creamy inside. Served with rich burnt-butter hollandaise and savoury furikake, this is a luxurious-looking side dish made from simple ingredients and easy techniques that can be prepared ahead for entertaining.

 

Pandan Financier with Brown Butter & Almond

A delicate French almond cake infused with fragrant pandan and nutty brown butter, with lightly crisp edges and a soft, moist centre. Elegant enough for a dinner party yet surprisingly simple to prepare, this is an easy make-ahead dessert that brings together classic French pastry technique with a familiar Asian flavour.
