We’re delighted to welcome Chef Andy(安迪师傅, a highly accomplished Executive Chef with over 30 years of experience in professional Chinese cuisine. Originally from Hong Kong, Chef Andy has built his reputation across some of the region’s most respected establishments — including Ah Yat Abalone, Imperial Treasure, East Ocean Seafood, and more.

 

He now leads the kitchen as the Executive Chef of a celebrated Chinese restaurant in Singapore, where he continues to champion refined Cantonese flavors with a modern sensibility.

 

In this exclusive demo-style masterclass, Chef Andy will walk you through three of his signature dishes — sharing his insights, techniques, and refined approach. Participants will enjoy full tasting portions, receive printed recipes, and take home skills that can be easily recreated at home.

 

1. Crispy Fish Maw and Millet in Golden Broth

A luxurious and nourishing dish that showcases the elegance of Cantonese soup culture. Chef Andy will demonstrate how to transform premium fish maw into a crispy golden delight — carefully fried to preserve texture — and serve it in a comforting, house-made golden broth infused with pumpkin, chicken, and dried seafood essence. Finished with nutty millet, this dish offers rich umami, warmth, and refined texture.

 

2. Spicy Crispy Salt-Baked Chicken with Fragrant Sichuan Heat

One of Yan Ting’s most popular dishes — and for good reason. You’ll learn the technique behind getting that perfectly crisp, golden skin, from how to dry the skin properly to roasting it just right. The chicken is paired with Chef Andy’s signature Sichuan pepper sauce, adding a bold, aromatic kick to this traditional salt-baked classic.

 

3. Signature Seafood Congee with Hairy Crab Roe and Prawn Broth

A luxurious, soul-warming congee built from a deeply flavorful prawn broth enriched with seasonal hairy crab roe, offering unmatched depth and richness. The congee is generously studded with premium seafood — including sweet prawns, tender scallops, flaky fish slices, and delicate hairy crab meat — resulting in a silky, savory bowl that celebrates the very best of the sea.
