Chinese New Year festivities often involve the practice of many traditions – one of which is the tossing of Yu Sheng that symbolises good fortune, prosperity and abundance. Gather your loved ones to welcome the new year with this vibrant, healthy and delicious prosperity salad. Learn how to use fresh ingredients to create this hearty medley of vegetables, fry in a Le Creuset pan, then mixed together with fruits and an a well-balanced dressing.

The prawn is rolled inside the fish fillet with its head fried into crispy golden brown resembling a dragon, while the crab roe sauce represents gold and silver color (龙马精神,金银满屋).
