With over 17 years in the F&B industry, Chef Vincent has helmed Western kitchens in both Shanghai (2009–2014) and Singapore (2015–present). Currently serving as Head Chef of Western Cuisine, he is known for his mastery of sauces, perfectly balanced flavours, and warm teaching style.

In this special holiday edition, you’ll learn to create an elegant four-course menu that captures the essence of a luxurious festive dinner — rich, aromatic, and unforgettable.

1.The Ultimate BBQ Prime Pork Ribs with Homemade BBQ Sauce and Mango-Orange Salad

Discover Chef Vincent’s signature homemade barbecue sauce — a bold, slow-simmered blend of tangy tomatoes, smoked paprika, sweet honey, and a touch of vinegar, cooked until glossy and rich. This sauce beautifully coats tender, oven-roasted pork ribs that fall off the bone. Served with a refreshing salad of pickled cucumber, citrus segments, red onions, pine nuts, and chives for a bright and balanced finish.

 

2.Lobster Bisque with Garlic Butter Toast

A deeply flavorful, silky-smooth lobster bisque made entirely from scratch — simmered with roasted lobster shells, aromatic herbs, and brandy for depth, then finished with cream for a velvety texture. Served with golden toasted bread slathered in homemade garlic butter — perfectly crisp on the outside, soft and fragrant within.

 

3.The Best Lobster Risotto 

Learn the secrets to an ultra-creamy risotto infused with stock, butter, and white wine — a luxurious base for sweet chunks of lobster tail. Each participant will receive half lobster to prepare and serve atop their risotto, finished with cheese and fresh herbs for a restaurant-level presentation.
