To find high-quality authentic Vietnamese banh mi in Singapore is impossible. Learn from Chef Edouard Lacouture, who’s perfected his own banh mi and will share both his authentic rendition and reinterpretation in this class!


1) Pork Country Terrine Banh Mi

Chef Edouard takes the banh mi back to France by replacing the Vietnamese cold cut by a traditional country terrine.


What you will learn:

  • Vietnamese Baguette-making: they are one of a kind. To find an authentic Vietnamese baguette in Singapore was truly difficult. Chef Christophe will teach to create fresh Viet baguettes that are crispy on the outside and soft on the inside. When you gently squeeze the baguette, you can hear it crackling.
  • Mama-style country pate: learn how to craft country-style terrine like the French!
  • Brown butter mayonnaise.
  • Freshness Assembly: meticulously prepare all the ingredients for you to create the authentic signature classic banh mi with pickled daikon and carrot, crisp cilantro and a cool sliver of cucumber surrounding the savoury sweet pate.


2) Duck Gizzards Confit Banh Mi Bao

Inspired by Vietnamese chicken cabbage salad, Chef Edouard puts this aromatic freshness in a bao and goodness of duck gizzard confit.


What you will learn:

  • Soft, pillowy and fluffy steamed buns making: They go perfectly with almost anything. Learn all the techniques from Chef Christophe himself!
  • Duck gizzards cooking: Chef Edouard will teach you how to cook tender & crisp duck gizzards to perfection along with his secret seasoning!
  • Tangy cabbage fennel slaw: Chef Edouard will teach you how to create an aromatic crunchy Vietnamese cabbage slaw.
  • Freshness Assembly: Chef Edouard will teach you how to layer and balance fresh flavours, colours and textures: pleasures of the palate: crunchy fresh vegetables, tender gizzards married to the softy bun!


3) Lemongrass Beef Steak Banh Mi

For this recipe, Chef Edouard Vietnamese will make the fragrant lemongrass steak


What you will learn:

  • Vietnamese steak marinade
  • Vietnamese herb sauce
  • Learn to assemble the banh mi served with lemongrass beef steak, pickled daikon and carrot, crisp cilantro, fresh cucumber with a tangy Vietnamese herb sauce.
