Flourless Chocolate and Pistachio Torte

Deeply dark and chocolaty, underscored by the luxurious flavour of pistachio nuts, this flourless number is extravagant enough to be festive yet light enough to be an ideal sweet ending to a rich special occasion meal. The finishing swirl of fudgy chocolate date frosting is the icing on the cake, so to speak.

Lemon Yoghurt Cake with Honey and Thyme Poached Figs

The satisfaction of a cheesecake with none of the heaviness? Yoghurt cake to the rescue! The Greek yoghurt-based batter, barely bound by oat flour and zesty with the flavour of lemon, bakes up fluffy then slightly collapses into its centre, resulting in a moist and soufflé-like consistency. Luscious fresh figs lightly poached in a thyme-infused honey syrup balance the tartness of the cake.

Panforte

Generously studded with hazelnuts, almonds, and succulent dried figs, this Tuscan specialty originating from the medieval city of Siena is fragrant with spice and gently sweetened with honey. Cocoa imparts a beautiful hue and a note of mystery, whilst buckwheat flour more than admirably stands in for the usual by reinforcing the nutty flavour. And, it gets better the longer you keep it, thus making it the perfect make-ahead holiday food gift. As versatile as it is delectable, it is just as great with an afternoon espresso, with a glass of dessert wine, or on a cheese board.

Cornbread

The making of a cracking cornbread is steeped in much lore, myth, and most of all, heated discussion. Flour, no flour? Egg, no egg? Sugar, no sugar? All great subjects to debate, but certainly the one thing most agree upon is that the cornbread batter sizzling upon contact with a hot cast iron skillet is absolutely essential for ensuring the best kind of cornbread crust.
