Moist, dark and spicy gingerbread given a nutty edge with buckwheat flour. Make it grand frosted with a decadent cream cheese white chocolate frosting and festively decorated, or keep it simple and serve it with a rose hip apple compote (see Bonus Recipes below). GF
Chocolate Raspberry Linzertorte
This Austrian, German and Swiss beloved Christmas torte is given a twist with a buttery, friable spiced pastry made with hazelnuts, teff flour, and cocoa. When served as a plated dessert, it’s very nice with a scoop of vanilla bean ice cream (see Bonus Recipes below). GF
Date Brazil Nut Cherry Fruitcake
Either didn’t get an opportunity to plan a fruitcake months in advance – who does? – or find the traditional iteration far too heavy and sweet? This baby has your name on it, chockfull of dried fruit and nuts. Bound with teff flour, it works just as well as a snacking cake, dessert, or even with a cheese course. GF
